Indian Pakoras
A delicious crispy spiced fritter
Ingredients
1 cup Channa flour also known as Basan flour
1 tbsp Nela's curry spice
1 tsp crushed Garlic
1 tsp crushed Ginger
¾ tsp red chili powder (optional)
Salt to taste (pinch)
1 tsp Brown Sugar (optional)
½ -¾ cup Water
Chop small pieces of Broccoli and Cauliflower leaving small stalks attached (makes it easy to dip into the batter and also into the hot oil later), Chop big pieces of banana, whole chilies, Onion rings, thinly sliced Potato, Kumara, Taro (Boil this first than slice), also filleted fish.
Method
In a bowl sift channa flour add all ingredients and mix well removing any lumps using a whisk.
Heat oil in fryer. Test the oil is ready by dropping a tiny bit of batter into the oil and if it rises to the surface quickly its ready for frying.
Dip all the same vegetables for frying in one batch lots to ensure even cooking time. For example, dip all the Cauliflower and fry until golden brown than cook the Broccoli, then the Bananas etc.
For best results dip the fish fillets in the batter and fry separately from vegetables.

Tip:
Once oil is cold strain and place in cool place for next time.
